Last week Happen Innovation Agency were lucky enough to welcome Kristen Schnepp from Gringa Dairy to the Hub, who shared with us how she came to make the finest and most delicious Chihuahuas (which, we learnt, is not just a breed of dog) in London.
When only recounting the most superficial of details, it could seem like Kristen’s business idea was destined for failure. An American looking to make authentic Mexican cheese, despite having no experience in cheese production. The product would have a focus on fresh and natural ingredients but would be produced under a railway arch in Peckham, south London. However, in reality, Kristen has been so successful precisely because of her ability to use the barriers presented to her, mainly because she cleverly used fantastic insights to her advantage.
A dairy in London may have to travel further for milk, but it can also deliver to its customers faster and with less expense, meaning more affordable and fresher produce.
Then take the branding, Kristen’s business was named ‘Gringa Dairy’ a tongue in cheek reference to her position as an outsider in the world of Mexican cheese and as a way to signify that she was embracing Mexican culture rather than appropriating it. It is also typical of a company whose ethos is to do everything with honesty and humour. What better way to gain credibility fast.
Above all, the popularity of ‘Gringa Dairy’ produce reveals the importance of having clear insights about consumers and understanding trends within the market. Kristen saw the move towards high-quality low volume produce and was also aware of the advances in quality of Mexican food within London. She understood that Mexican food outlets and suppliers would increasingly be looking for high-quality ingredients and used this a basis for a winning and innovative business, which has duly flourished.
